Orange Tart

1 1/4 cup all purpose flour

5 tsp superfine sugar

1/2 cup butter, cut into small pieces

1 tbsp water


grated rind of 2 oranges

9 tbsp orange juice

1 cup fresh white bread crumbs

2 tbsp lemon juice

2/3 cup light cream

1/4 cup butter

1/4 cup superfine sugar

2 eggs, separated

pinch of salt


Preheat the oven 375 f (180 c)
Place the flour and sugar in a bowl and rub inthe butter with your finger. Add the cold water and work the mixture together until a soft pastry was formed.Wrap and leave to chill for 30 min
Roll out the dough and line a 9 1/2 inch loose-bottomed flan pan. Prick the pastry with folk and leave to chill for 30 min
line the pie shell with foil and baking beans and bake for 15 min – Remove the Foil and bean and bake for an additional 15 min
to make the filling, mix the orange rind and juice and the bread crumb in a bowl. Stir in the lemon juice and light cream.
Melt the butter and sugar in a pan over a low heat. Remove the pan from low heat, add the 2 egg yolks, the salt, and the bread crumb mixture and stir
In mixing bowl, whisk the egg whites with a pinch of salt until the form soft peaks. Fold them in to the egg yolk mixture
Pour the filling mixture into the pie shell. Bake in at 325 f, for about 45 min or until just set. Leave to cool slightly and serve warm
