Lemon Meringue Tart

1 1/2 cups (300 g) softened butter

1 2/3 cups (200 g) confectioners’ sugar

2 larges eggs

1/3 cups plus 1 tbsp (50 g) almond flour

4 cups (500 g) all purpose flourwatch Transformers: The Last Knight movie now

1 tsp vanilla extract


4 eggs yolks (70 g)

2 small eggs

1/3 cup (75 g) sugar

1/2 cup (125 ml) lemon juice

5 tbsp (75 g) butter


7 tbsp (100 ml) water

2 1/2 cups (500 g) sugar

4 egg whites


Mix the the butter, eggs, sugar, salt, vanilla extract, almond and all purpose flour to form a smooth dough. Form in to a ball, cover with plastic wrap and let rest
Preheat the oven to 325 f (170 c)
for the cream, beat the egg yolks and the egg white the sugar until it becomes pale, thick and foamy. Bring the lemon juice to a boil in a saucepan, remove the saucepan to the heat and whisk in the egg mixture. return the saucepan to heat and bring the mixture to 176 f (80). Add the butter,mix well and remove from heat
for the meringue, heat the water and 2 cups (400 g) of sugar to 250 F (121 c). while the sugar syrup heats, begin to beat the egg white with the remaining sugar. Add the Syrup slowly drizzle into the stiff egg whites.Continue beating until the meringue cool
Roll out the pastry into 1/5 inches (3 min) thick sheet and use it to line a buttered and floured tart tin. Pour the lemon cream into the pastry shell, filling the shell three-quarters full. Bake the tart for 25 min. Let cool and spread the meringue on top of the tart. Place the tart under a preheated the broiler until the meringue begin to color.
