Ingredients

1 cup (115 g) almond – half blanched – half unblanced

1 cup (115 g) hazelnuts – half blanched – half unblanced

* You can use any nuts*

1 tsp (5 ml) almond oil or flavored oil

1 cup (200 g) granulated sugar

1 tbsp lemon juice

Direction

Preheat the oven to 300 f (150 c).
Scatter the nuts on a baking sheet and toast in the oven for 30 minor, and don’t forget to shake occasionally. the nuts should smell pleasant (Don’t eat it all) and have turned brown and very dry
coarsely chop the toasted nuts or crush them roughly with a rolling pin.
Cover another baking tray with foil and grease it generously with the oil
Put the sugar in a pile in a small pan and pour the lemon juice round it. Cook over a high heat, shaking the pan, until the sugar turns a coffee color.
Immediately tip in the nuts and stir once, then pour the mixture in the oily pan to harden.
Once set, break up the caramel into pieces and store in an airtight tin
