2 cups (240 g ) bread flour

3 Tbsp warm water

2 2/3 tsp active dry yeast

Activate the yeast by mixing it to the warm water and half of the sugar – let seat fr 12 min
Mix the though using 2/3 cup (80 g) of flour and the yeast mixture. Let rest for 30 min on a floured work surface. Transfer to a bowl add the eggs, softened butter, the remaining flour, sugar and a pinch of salt

let rest for 40 min – it should double volume – Preheats the oven to 35o f (180 c)
Butter ten 2 1/2-inch (6cm) adn 2 inch (5cm) height stainless molds
divide the dough between the mold, let rise again and bake for 15 min
to make the syrup: boil the sugar and water until it thickens
Pour the syrup the hot syrup over the cooled beignets
before serving add the rum
