Marble Cakes

4 cups (1 lb 2 oz or 500 g) all purpose flour

3 eggs

3/4 cup (5 1/2 oz or 150 g) sugar

1/4 cup (60 ml) anise liqueur

1 cup (250 ml) milk

2 tbsps baking powder

3/4 cup (6 oz or 170 g) butter grated zest of 1/2 lemon

1/4 cup (1 oz or 25 g) cocoa powder


Preheat the oven to 350 f (180 c). Place the flour in a large mixing bowl. Make a well in the center. Add the eggs, sugar, anise, liqueur, milk, 10 1/2 tablespoons butter, baking powder and the lemon zest in the center
mix well to form a smooth batter. Pour 1/3 of batter into a smaller bowl and mix in the cacao powder
butter and flour the cake pan and pour in the half of plain batter. top with the cacao batter and then pour over the remaining plain batter. Bake until the cake is golden-brown on top, about 30 min. Cool and serve
