Basic Vanilla Cake & Vanilla buttercream

Makes : 12 cupcakes



1/2 cup butter softened or soft margarine

1/2 cup of super fine sugar

2 eggs, lightly beaten

1 tsp vanilla extract

scant 1 cup self rise flour (you can make your own by combining 1 cup all purpose flour with 1 tsp baking powder and 1/4 tsp salt)

1 tbsp milk


3/4 cup unsalted butter, softened

1 tsp of vanilla extract

2 1/4 cup confectioners’ sugar

1-2 tbsp milk


make the cream by placing the butter and vanilla extract in a large bowl and using the electric mixer, beat the butter until very smooth
Gradually, shit in the confectioner sugar, beating well after each addition _ the more you beat it the lighter and fluffier it will be!!
beat in the milk – cover four an hour, at room temperature before using – And you can add food coloring
preheat the one to 350 f (180 c)
put 12 paper liners in a shallow muffin pan
Mix the sugar and butter in a bowl, until the the batter is pale, light, and fluffy
Gradually add the egg – add about a tbsp at a time and beat thoroughly after each addiction
beat in the vanilla extract, shift in the flour into the bowl
gently fold the flour in the batter until thoroughly incorporate
add the milk and fold gently into the batter – the batter should have a smooth consistency and drop easily from the spoon if tapped on the side of the bowl
spoon the batter into the paper liners, being careful not to overfill them
bake in the preheated oven for 15-20 min or until the cupcakes are golden and just firm to the touch
pipe the butter-cream on the cool cupcake
