Pasrty

1 1/4 cups all purpose flour

1 tsp baking powder

1 tbsp superfine sugar

1 tbsp butter,cut into small pieces

1/4 cup milk

Confections’ sugar

salt

Filling

3 dessert apples, peeled, cored and sliced

1/2 superfine sugar

1 tbsp lemon juice

1 tsp ground cinnamon

1 1/3 cups water

2/3 cup heavy cream, whipped lightly

Direction

Preheat the oven to 425 f and grease the baking tray
Shift the flour, salt and baking powder into a mixing bowl.stir in the sugar then rub in the butter with your fingertips until the mixture resembles fine bread crumbs
Pour in the milk and mix everything to a soft dough. on a lightly floured surface, knead the dough lightly, then roll out to a thickness of 1/2 inch
stamp out 4 rounds, using a 2 inch cutter. Transfer the rounds to the prepared baking sheet
bake for 15 min
The filling: to a saucepan add the apple sliced, sugar,lemon juice, sugar, cinnamon and the water. Bring to a broil and simmer until the apple are tender. cool a little, the remove the apple.
split the shortcake in half and fill wit the apple and cream
Dust wit confectioner’ sugar
